How to use

Before the first use, the Hungarian Cooking Dish MUST be seasoned!
This applies to all new dishes. Exception: if you purchased a pre-seasoned (decorated) Hungarian Cooking Dish.
Before seasoning, wash only the inside with soap or dishwashing liquid. Do not soak it and do not let water run into the hinges. Then dry it completely!
Next, coat the inside and outside thoroughly with fat (lard, oil, bacon).
Place the Hungarian Cooking Dish OPEN on an OPEN flame, so that fire can reach every part.
Seasoning is done when the fat burns onto the surface and it turns black.
This black layer is a natural patina that protects against rust — it is not an artificial enamel!
The patina may be uneven, it can wear off, and if rust appears, the seasoning should be repeated.
Regularly oil the inside and outside of your Hungarian Cooking Dish!

It is recommended to line the bottom of the dish with aluminum foil or baking paper.
Fill the seasoned Hungarian Cooking Dish in layers with vegetables such as bell peppers, tomatoes, potatoes, zucchini, eggplant, mushrooms, onions, etc.
Add some fat (oil, butter, bacon) and a type of meat: chicken, fish, turkey, pork chops, pre-marinated or partially cooked pork knuckle, etc.
You can also line the dish thinly with bacon before adding the vegetables.
Season and salt to taste (for example basil, pepper, oregano, rosemary, thyme — whatever suits your dish).

Place the closed Hungarian Cooking Dish on embers.
ATTENTION!!! Use embers, not an open flame (otherwise the dish may burn)!
You will know the embers are ready when you hear a gentle, even sizzling sound from the dish.
If you hear loud bubbling or boiling, the embers are still too hot — wait a bit or remove some embers from underneath.
Cooking time is approximately 1–1.5 hours.
If using a kitchen oven: place the closed Hungarian Cooking Dish into a preheated oven at around 200°C and bake for about 1–2 hours.
You will achieve the same unique and rich flavor!

Remove all food residues from the Hungarian Cooking Dish.
Wipe it completely dry and clean, lightly oil it, and hang it open on a hook in an airy place.

Be careful when using the Hungarian Cooking Dish!
Hot steam escaping when opening the pot, or the embers, can cause burns.
Do not lean over the dish during seasoning, as the fat can catch fire.
Keep small children away from the hot pot.
Always follow general safety rules when cooking and baking.

During production and seasoning, surfaces are treated with sunflower oil and pork lard.
Material: carbon steel (iron).
